Tomatoes are delicious raw or cooked although your body can absorb more lycopene when the tomatoes are cooked, so eat a variety of tomato-based foods. Slice a fresh tomato on toast or sandwiches, or make a garden-fresh Caprese salad. Enjoy cooked tomatoes in marinara sauce on pasta, or in tomato-based soups.
Some people find the texture of eggplant unpleasant or the flavor bland. If you are one of them, Nofziger recommends giving eggplant a supporting role in meals cut it up into bite size pieces and add with other vegetables to soup or stir fry instead of highlighting it as the main ingredient. Confused by colorful bell peppers? Green peppers typically have the most zip followed by red peppers, while yellow and orange are fairly mild. Raw, bell peppers are a good addition to salads or as a snack with hummus. Cooked peppers are also delicious so try peppers grilled or roasted with other vegetables like zucchini and onion, or a stuffed bell pepper.
We know that plant foods are cancer fighters and I advise people to eat five to nine servings of fruits and vegetables every day, says Nofziger. Tomatoes, potatoes, peppers and eggplants are a delicious way to add flavor and variety to a healthy plate.
What Exactly Is Arthritis

Some people blame arthritic swelling, pain and stiffness on a buildup of solanine, a bitter-tasting chemical found in nightshade plants.
Its true that solanine is one of the glykoalkaloids that make deadly nightshade deadly, and green potato leaves, sprouts and stems poisonous.
But it is highly unlikely that avoiding the trace amounts of solanine found in nightshade vegetables will ease your arthritic pain or inflammation. Research to support this claim just isnt there.
Furthermore, it would be a shame to eliminate these nutritious foods from your diet.
One of the best ways to reduce arthritis symptoms and inflammation is to eat well. By that I mean following an anti-inflammatory diet such as the Mediterranean diet, or one that is predominantly plant-based .
Youll also want to limit meat, especially processed meats like sausage fried foods and processed foods and other forms of refined carbohydrate.
How To Eat To Reduce Inflammation
And thats good news, because lifestyle is changeable. Its not something you need a doctors prescription to alter. You cant cure arthritis or rheumatologic disease, says Dr Yu. But it is possible to put it in remission, he says. Medication is a cornersone of treatment and is usually necessary to achieve remission in inflammatory arthritis. But making diet changes that help you lose weight if you need to and reduce your intake of pro-inflammatory processed foods can be an important part of your overall arthritis treatment plan.
While Dr. Yu allows that for some patients, eating nightshade vegetables could be tied to a food sensitivity or allergy, he stresses that would be an entirely individual reaction.
There is no science-based proof that nightshade vegetables exacerbate inflammation.
I would recommend cutting out the more obvious inflammatory foods, things like refined sugar, high-salt foods, processed food, and red meat first, he says. Then, he suggests, take a look at other lifestyle habits to make sure theyre healthy.

Advanced Glycation End Products
AGEs are inflammatory compounds that can accumulate in tissues, particularly as someone ages. An article in Patient Education explains that people with diseases such as diabetes and RA often have increased AGE levels. So, reducing AGE levels may help reduce inflammation.
Fat and sugar both increase AGE levels in the body. Some food processing methods and high temperature cooking also increase the AGE levels in food.
Nightshade Vegetables Cause Inflammation
Tomatoes, potatoes, eggplants, and peppers all contain the chemical solanine, which some blame for arthritis pain. However, the Arthritis Foundation say that there is no scientific evidence for this. Adding these nutritious vegetables to the diet can have many benefits for chronic health conditions.

What gives? These are some of the very foods you are supposed to eat more of to keep your weight down and boost your heart health, right?
Many people with inflammatory types of arthritis such as rheumatoid arthritis do report a worsening of symptoms such as joint pain and swelling after consuming nightshades. Known in agricultural circles as Solanaceae, nightshades are a botanical family of plants that share certain characteristics. There are around 2,500 species of nightshades . Some, namely potatoes, eggplant, tomatoes and pepper, are staples in the American diet.
There are some theories on how nightshades and arthritis symptoms are linked, the main one being that nightshades contain alkaloids such as the glycoalkaloid solanine which have pro-inflammatory properties in some individuals.
Loads of anecdotal evidence link nightshades to worsening arthritis symptoms, but theres little on the scientific side to support this link. To further muddy the waters, a study published in a 2011 issue of the shu showed yellow and purple potatoes actually lowered blood markers for inflammation in healthy men.
Sandon agrees: If these foods really seem to increase symptoms, avoid them and replace them with other sources of key nutrients. A registered dietician can offer suggestions on healthy substitutes.
Are Tomatoes Bad For Arthritis

Theyve been shown to sometimes help people with rheumatoid arthritis symptoms. But what works for one person, may not work for another. So, its worth speaking to your healthcare team before cutting anything out.
If you have any type of arthritis you should try to eat:
- a balanced diet to get the vitamins and nutrients you need
- a more Mediterranean-style diet which includes fish, pulses, nuts, olive oil and plenty of fruit and vegetables
- more omega-3 fatty acids, for example from oily fish.
Although there are no diets or supplements that will cure your arthritis, some people do find that their condition is affected by what they eat and their exercise levels.
Whatever you choose to do, its important to strike a balance between medication and lifestyle changes.
