I found one site that states saponins damage red blood cells, interfere with thyroid function, and inhibit enzymes in the body. They only provided one reference for this claim and it linked to an article that showed saponins kill leukemia cells.
Thats right, far from having damaging effects on red blood cells, saponins were found to help stop leukemia cells from growing, and this article is being used to promote a saponins are dangerous message.
This is a clear example of why you need to check the sources of information you read, especially about nutrition.
So many unqualified people spread messages that have absolutely no basis in science. Simply stating something as fact, and providing an inaccurate reference is unethical, dangerous and frankly shouldnt be allowed.
They also didnt provide any references for saponins interfering with thyroid function or inhibiting enzymes, so Im not sure where they pulled that information from other than a mistaken understanding of science and nutrition.
This type of thing happens all the time with people promoting certain diets, especially by people who dont have a background in nutrition or have something to sell you like a book, program, supplements, etc.
I also frequently find people using references for petri dish or animal model studies while making claims about humans and human nutrition. While these studies may be interesting, they dont prove anything about humans or human nutrition .
Green Tea And Other Beverages

Some claims against legumes are specific to a single type of legume and I wont be covering these in this article. Instead, Im focusing on more general claims as to why legumes are bad for you.

The Other Side Of The Story
While the theory linking bean anti-nutrients and autoimmune diseases such as rheumatoid arthritis seems plausible, actual research in this area is still in its infancy. And, almost everything we currently know about the activities of saponins and lectins is based on laboratory studies, not on studies involving actual human beings.
It is also important to keep in mind that the lectin content of beans varies depending on cultivar, location and processing methods used after harvesting, which is relevant since the harmful effects of lectins are believed to be dose-dependent. Plus, cooking destroys bean lectins as long as you cook your beans long enough and at a high enough temperature .
What’s more, research shows that beans have anti-inflammatory propertiesin vitro. One study found that hull extracts of the common bean were able to inhibit the pro-inflammatory mediators COX 1 and COX 2, an effect that was attributed to their antioxidant properties. Among the tested four bean varieties , this effect was most pronounced in black bean hulls which exerted even stronger COX-inhibiting effects than aspirin. In addition, another laboratory study found that protein hydrolysates derived from beans were capable of suppressing the NF-ÎºB pathway, which is a considered a prototypical pro-inflammatory signaling pathway, largely based on the role the NF-ÎºB protein complex plays in the expression of pro-inflammatory genes such as cytokines, chemokines and adhesion molecules .

The strong aroma of the rue herb balances the mild flavour of the mung beans. People say that rue herb to mung bean is like dry mandarin peel to red bean or tong choy to preserved bean curd.
The mung beans are really the supporting cast in this show. The star is the rue herb or Stink Grass. I was reluctant to smell it at first because of the name. But when I took a whiff of it, I quite liked it! It was a strong scent, but not a bad scent. When its in the soup, the scent is much milder. Peanuts and green peas are legumes that are ok to eat raw if you like and dont have a medically necessary reason to avoid this.
